Leh-ri-chi is how you should pronounce it on your next vacation in Italy. It’s spelled Lerici though, and it is heaven on earth in a wonderful Mediterranean beach resort – right up there among ones like Versilia, Cinque Terre or Porto Fino on the Italian Riviera. But why this obscure sounding place when there are far more well-known and well-celebrated Italian resorts? Well, what would you want with the celebrated resorts; wouldn’t you much rather have for yourself on your next vacation an undiscovered gem, a place that has somehow escaped the attention of the screaming hordes? Why would this place, so close to the other mainstays be left alone so much if it was all that wonderful? It is all about marketing.

Lerici has a somewhat picture book look; the buildings are the traditional Italian pastel, and they tower over the cozy little coves of its beaches; the majestic cliffs surrounding the town command the greatest part of your attention though. As much as Lerici is an unknown the world over, it is properly well-loved by the locals, and come summer, you’ll see plenty of local families and visitors from Milan descending on the town’s sparkling beaches.

What makes it so endearing though? On a vacation in Italy, Lerici mysteriously transports to the cultural heartland all of a sudden. Old men take walks on the beaches, women take care of their shops, and children play football on the beaches. And no one seems to know of or think about tourists – English is virtually unheard of here. But you still experience every eye-popping pleasure of a top-of-the-line Italian Riviera resort.

The most famous part of Lerici, is the notorious and famous medieval castle, towering over the town’s main square or piazza. The castle overlooks the famous Gulf of La Spezia and you’ll find a paleontology museum here. If you feel like it, you can take a great walk from the harbor up the rocks and down a path to the nearby village of Santa Renzo, where there is a smaller castle to poke around in, and this one is left alone by the vacationers to. If you ever make the mistake of going up one of the famous mountain trails in Cinque Terre to hamlets like this perched on top though you’ll have a similar experience, except that it will feel more like a visit to Disneyland, so full of Americans on vacation in Italy are these places.

Lerici has been a destination for great artists for centuries. Take a trek up the mountain to the little villages of Fiascherino and Tellaro and you’ll know why; at the end of the cliff you see a wide-open view of the deep blue sea and the jagged coasts. If you do decide to embrace it all and take Lerici in for your vacation in Italy this time, try the hotel Santa Renzo; the prices are reasonable at about $250 a night, and you get free parking. Try the Vertigo Bar for a little evening entertainment and the Gelateria Arcobaleno on Piazza Garibaldi is likely to make you wonder why you even need restaurants – so great are their gelatos and chocolate.

There are restaurants here that answer to every description, to every taste, and that sample every part of the world; food spills out from the restaurants onto the streets with food carts and food vendors everywhere especially the inner part of the cities. As you leave the city, independent spirited inventive cooking appears at roadside restaurants at every stop along every highway. Perhaps you never associated Spanish cooking with it, but seafood essential to the fresh spirit of all Spanish food. Take in any food market in Spain, and you’re certain to see half the market devoted to harvests of the sea.

So when you have this much choice in Spanish food, where exactly do you head for when you’re in Spain? The country attracts a lot of tourists; and  many restaurants in the downtown area serve Spanish food that’s somewhat altered for foreign tastes. But the authentic taste of Spain can be a wonderful thing, and denying tourists the authenticity of the experience can be quite unfair. If you ask me, the best Spanish cooking you’ll ever find in Spain will come from the restaurants that have no English or French to help the tourist with , and are unpretentious. You’ll need to call couple of days ahead to be seated, and when you get there, try their Iberica ham and steak. For the best gastronomical tour of Spain, try learning some of the terms you’ll find on any Spanish food menu. Any time you encounter a word on a menu that’s unfamiliar, look closely at the work to see what English word it might possibly resemble. Pescados, for instance, comes from Pisces, which you know from your time scouring the horoscopes, is fish; “mariscos” is … doesn’t it sound like “marine”? That’s right, it means seafood. What if you saw the word “carne” on there? You’ve heard of “carnal” haven’t you? It means “of the flesh” in English. And in Spanish, it’s meat.

When you head in for your first encounter with Spanish food, you might be a little surprised at the customs they have at restaurants. The moment you step in, your waiter will greet you and find you a seat (no surprise there). If you’re a little nervous about the price range they have, try asking him – cuanto cuesta? in Spanish. As soon as you are handed your menu, you’re expected to order something to drink – a white wine or red wine is customary. The waiter brings you your drink, and sets the table by placing some Spanish bread directly your table with no plate. It could also come with a dish of butter or olive oil. For a quick introduction to Spanish food, make sure you try something with rice in it – paella is rice. Usually, it comes with seafood, rabbit meat or chicken. If you think that there is a certain Arab influence you see here and there in Spanish food, you wouldn’t be wrong. North Africa isn’t far away, and there is a certain Arabic touch to Spanish food.

For our spring soup recipes, let’s start out with an asparagus soup. There is a kind of a gourmet quality to this one though. It uses to green garlic. You’ll need to be extra alert over the next visit to the farmers market now for this. You get a great creamy frothy soup that is so colorful, it will gladden your heart. So what you need are these: a pound of asparagus, 6 cups of vegetable stock, a nicely chopped-up bulb of spring garlic, a third of a cup of Parmesan cheese grated up, a couple of tablespoons of flat-leaf parsley, half a cup of cooked pasta, and of course you’ll like croutons.

Get your vegetable stock in the pot, and begin to bring to a boil. Throw in the chopped-up garlic and the asparagus stalks, to have the flavor really come out. Now that you have this broth on your hands, season it with salt and pepper to taste. Slice up the asparagus into little pieces, and bring a boil again. Simmer for maybe five minutes; the idea is to turn the asparagus bright green and tender, but not all squishy. You’re almost ready now.

You will need to put the cheese, the chopped parsley and the eggs all in a bowl and beat them together. You need to make sure that your soup is only simmering and not actually boiling. Spoon out some into this mixture, and keep whisking. Empty it all into the boiling soup, and keep whisking. It should cook for about three minutes; bring in the pasta, and you’re good to go. It should serve about four people, and when you serve with croutons, it should really add some class. Trying soup recipes with fresh produce is a great way to introduce your children to vegetables in the diet; it’s a great way, because admit it, soups are classy.
